HOW TO MAKE BAKED BROCCOLI PATTIES

Ingredients:

2 tspolive oil
2garlic cloves, minced
1/2onion, diced fine
16 ozfrozen broccoli, thawed, rough chop
1 cpanko crumbs
1/2 ccheddar cheese, shredded
1/3 cparmesean cheese, grated
2eggs, beaten slightly
salt and pepper
Instructions:
1 Preheat the oven to 400 degrees F. Line a baking sheet with foil and spray lightly with non-stick spray.
2 Heat oil and saute the onions and garlic until softened. Season with salt and pepper. Set aside to cool.
3 Place the thawed broccoli in a kitchen tea towel and twist each end tightly to remove any excess water. In a bowl, beat the eggs and mix in the cheeses. Give the broccoli a rough chop.
4 Add the broccoli, garlic, onions and Panko crumbs to the egg/cheese mixture and mix well.
5 Form patties and place on baking sheet. (The mixture has a wet consistency at this point–you don’t think they will hold together, but they do.)
6 Bake for 15 minutes. Flip the patties over and cook for another 15 minutes.
7 ENJOY! I can see dipping these in a garlic aioli, mayo/dill or ranch dressing if one was so inclined. Great grab-n-go snacks.
